2 Oranges 

1/2 Cup baby greens

1/2 Cup baby arugula 

1 T. Olive oil

1 T. Apple cider vinegar

Pinch of crushed dried mint

Salt and pepper

Take two oranges and slice off the tops and the bottoms.  Slice off the thick rind of each orange, down to the meat of the fruit.  Be sure to remove all of the white.  Take a pairing knife and cut as close to the skin of the orange on each side of a single slice.  This leaves the bitter outer layer and leaves you with just the slice of the meat of the fruit.  Do this until all of the orange meat is removed.  This technique is called supreme.  

In a large mixing bowl, add orange slices, greens, olive oil, vinegar, mint and salt and pepper to taste.

Mix until well combined, plate and enjoy.
